Maitake contains vitamin D and a high amount of B-complex vitamins, and it comprises about 40% usable protein, 15% fiber (or more), 8% fats, and 9% minerals, especially potassium. It has about 26% beta glucans, including one called grifolan. Thirteen animal studies showed grifolan to have immunomodulating effects on antibody and cytokine production and anti-cancer effects.
